Eggplant rolls in tomato sauce: the tasty recipe to try

Ingredients:
300 g of minced meat
3 eggplants
2 large tomatoes
1 onion
3 garlic cloves
1 handful of coriander
1 tsp of tomato paste
Salt, pepper, paprika, turmeric and ginger
Olive oil
50 ml of water
Olives
Directions:
1. Slice eggplants and grill them on both sides.
2. Now mix meat with salt, pepper and all of the spices.
3. Stuff grilled eggplants with this mixture and roll.
4. Stir fry onion and garlic in a pan with some oil for 2 minutes.
5. Pour in grated tomatoes and season with salt, pepper and the spices.
6. Add tomato paste and a bit of water, too.
7. Let simmer for 3 minutes, then place eggplant rolls in the pan.
8. Cook at low heat for 35-40 minutes.
9. Add fresh coriander and some olives.
