Chocolate and coconut squares: the recipe for a dessert that melts in your mouth

Ingredients:
- For the chocolate sponge cake:
5 eggs
1 pinch of salt
150 g of sugar
50 ml of water
120 g of flour
30 g of cocoa powder
- For the coconut layer:
2 eggs
80 g of sugar
180-200 g of dried coconut
- For the filling:
300 g of cream cheese
70 g of powdered sugar
300 g of whipping cream
100 g of melted white chocolate
50 g of dried coconut
80 g of toasted almonds
100 ml of cream (or milk) + 1 tbsp of sugar for the syrup
- For the chocolate ganache:
100 g of dark chocolate
100 g of cream
Directions:
1. Chocolate sponge cake: whisk egg whites with sugar. Then add egg yolks and water.
2. Mix and sift dry ingredients: flour, cocoa powder and baking powder. Then stir them into the batter.
3. Bake in a pre-heated oven at 180° for 35-40 minutes.
4. Coconut layer: whisk 2 eggs with sugar, then add coconut.
5. Bake at 200° for 20 minutes.
6. Filling: mix cheese, powdered sugar, cream, white chocolate, chopped almonds and coconut.
7. Assemble the cake and refrigerate overnight.
8. Ganache: melt chocolate and cream; then use it to coat the cake.
9. Cut in squares and decorate with some chocolate chips on top.
