Coconut and chocolate cake squares: how to make them moist and delicious!

They are simply addictive!
INGREDIENTS
INGREDIENTS
150 g (5 oz) cornflour;
4 eggs;
100 g (3.5 oz) sugar;
100 ml (3.5 oz) vegetable oil;
50 g (1.7 oz) shredded coconut;
125 g (4.4 oz) sour cream;
½ tsp vanilla powder;
1 ½ tsp baking powder;
100 g (3.5 oz) milk chocolate;
4 tbsp full-fat cream.
METHOD
- Beat eggs with sugar until they get pale and fluffy. Pour in vegetable oil and sour cream. Beat again.
- Sprinkle shredded coconut, add vanilla, baking powder and cornflour in. Beat with a mixer until smooth batter forms.
- Pour the batter into rectangular baking pan and bake at 180C/350F for 20-25 minutes.
- Microwave chocolate with cream and stir to make a smooth ganache.
- Cut the cooled cake into squares and pour the ganache on top. Sprinkle with some coconut before serving.
