Coconut and chocolate cake squares: how to make them moist and delicious!

They are simply addictive! 

INGREDIENTS
 150 g (5 oz) cornflour;
 4 eggs;
 100 g (3.5 oz) sugar;
 100 ml (3.5 oz) vegetable oil;
 50 g (1.7 oz) shredded coconut;
 125 g (4.4 oz) sour cream;
 ½ tsp vanilla powder;
 1 ½ tsp baking powder;
 100 g (3.5 oz) milk chocolate;
 4 tbsp full-fat cream.
 
METHOD
  1. Beat eggs with sugar until they get pale and fluffy. Pour in vegetable oil and sour cream. Beat again.
  2. Sprinkle shredded coconut, add vanilla, baking powder and cornflour in. Beat with a mixer until smooth batter forms.
  3. Pour the batter into rectangular baking pan and bake at 180C/350F for 20-25 minutes.
  4. Microwave chocolate with cream and stir to make a smooth ganache.
  5. Cut the cooled cake into squares and pour the ganache on top. Sprinkle with some coconut before serving.
