Coconut and chocolate cake: an easy recipe for a fresh and delicious cake!

Cocoa Biscuits:
70ml (0.3 cup) vegetable oil
70g (0.3 cup) sugar
30g (0.2 cup) unsweetened cocoa powder
5g (1 tsp) vanilla sugar
1 egg
30g (0.2 cup) flour 00
Coconut mousse:
25g (0.3 cup) coconut flakes
200ml (0.8 cup) coconut milk
1g (1/4 tsp) salt
100g (0.5 cup) sugar
480g (2 cups) whipped cream
8g (2 tsp) gelatine powder
45ml (3 tbsp) coconut milk
Chocolate glaze:
150g (1.5 cup) chocolate
170ml (0.7 cup) whipping cream
Coconut flakes for decoration
METHOD
- Cocoa Brownie: Add one large egg and sugar to the bowl, whisk until foamy. Pour vegetable oil, sift, add flour and salt, and then add coffee and cocoa. Finally, add the vanilla extract, combine all the ingredients and pour the brown mixture into a baking tin of 20 cm in diameter. Bake the browns at 180 degrees Celsius for 10 to 12 minutes. After the browns are baked, leave it to cool completely.
- Coconut mousse: Mix gelatine powder with coconut milk and leave to swell. Pour sugar, salt, coconut milk, coconut cream into a cooking pot and heat everything over low heat, then add gelatine to the mixture. Allow the mixture to cool, then add the coconut flakes and whipped cream. Pour the mousse over the browns. Leave in the fridge for 4 hours.
- Glaze: Heat the whipped cream until cooked, and then add the chocolate to the cream. Leave the chocolate in the cream to stand for 5 minutes, then mix the glaze.
- Pour the glaze over the mousse.
- Decoration: Decorate the cake with coconut flakes, leaves or pieces of coconut, or whatever you want.
