Spring onion pancakes: the recipe to make them super flaky

Ingredients:
(8 pcs)
250 g of all purpose flour
1 tsp of instant dry yeast
3 tbsp of cooking oil + extra
125 ml of water
1 tsp of salt
Shredded mozzarella cheese
Spring onion
Melted butter for brushing
Directions:
1. Mix all of then ingredients to shape the dough, cover and let rest for 1 hour.
2. Divide in 8 pieces.
3. Use a rolling pin to flatten into thin sheets and brush with melted butter.
4. Fill with mozzarella cheese and chopped spring onion.
5. Cover with another layer and repeat until you finish all of the dough.
6. Roll up and cut in 8 thick slices.
7. Press with your hands to flatten.
8. Place in a pan with some cooking oil and fry over low heat until golden and crispy on both sides.
