Castella pancake: how to make it fluffy in a few minutes!

A big fluffy souffle pancake baked in a cast-iron skillet ready in no-time!

INGREDIENTS
2 yolks
20g honey
15g sugar
Salt
60ml (0.2 cup) milk
 
35g (0.3 cup) flour (all purpose)
5g baking powder
 
2 egg whites
20g (0.1 cup) sugar
 
METHOD
  1. Whisk the yolk, honey, sugar, salt and milk. Add flour and baking powder. Mix.
  2. Beat egg whites with sugar until peaks. Connect the two masses. Pour the mixture into a skillet and bake for 7 minutes at 180°C / 350°F.
  3. Remove pancake from oven and cut and bake again for 12 minutes at 180°C / 350°F.
