Castella pancake: how to make it fluffy in a few minutes!

A big fluffy souffle pancake baked in a cast-iron skillet ready in no-time!
INGREDIENTS
INGREDIENTS
2 yolks
20g honey
15g sugar
Salt
60ml (0.2 cup) milk
35g (0.3 cup) flour (all purpose)
5g baking powder
2 egg whites
20g (0.1 cup) sugar
METHOD
- Whisk the yolk, honey, sugar, salt and milk. Add flour and baking powder. Mix.
- Beat egg whites with sugar until peaks. Connect the two masses. Pour the mixture into a skillet and bake for 7 minutes at 180°C / 350°F.
- Remove pancake from oven and cut and bake again for 12 minutes at 180°C / 350°F.
