Eggplant sandwich with tuna: the savory recipe you need to try

Ingredients:
1 medium-sized eggplant
Salt and pepper
3 green onions
100 g of tuna in oil
200 g of tomato sauce
Fresh parsley
70 g of grated mozzarella cheese
Olive oil
1 garlic clove
Directions:
1. Cut the eggplant in thin slices, then sprinkle with salt and let sit for 15 minutes.
2. Place them in a tray coated with baking paper and drizzle with olive oil.
3. Season with salt and pepper, then bake at 180° for 20 minutes.
4. Finely chop green onions and fry them in a pan with some olive oil.
5. Add tuna, minced garlic, tomato sauce, salt and pepper; then let cook at low heat for 3-4 minutes.
6. Lastly, add chopped parsley.
7. Now pour a spoonful of this mixture on the eggplants and add mozzarella cheese.
8. Place on slice on top of the other.
9. Bake again at 180° for 15-20 minutes.
