Cauliflower and eggplant casserole: the recipe for a tasty

Ingredients:
1 eggplant
1 onion
2 garlic cloves
Olive oil
1 bell pepper (optional)
Salt and pepper
Chili pepper (optional)
150 g of tomato sauce
500 g of cauliflower
2 medium-sized eggs
40 g of grated cheese
Breadcrumbs
90 g of mozzarella cheese
Directions:
1. Cut cauliflower in pieces and boil it in salted water for 15 minutes.
2. Finely chop onion and garlic, then fry in a pan with some olive oil.
3. Add diced eggplant and bell pepper. Season with salt and pepper.
4. Cook at medium heat for 10 minutes with a lid on.
5. Add chili pepper and tomato sauce and cook for another 4 minutes.
6. Drain and mash cauliflower, then add salt, pepper, eggs and grated cheese.
7. Make a layer with this mixture in an oiled baking pan with some breadcrumbs on the bottom.
8. Now add the vegetables from before and finish with some shredded mozzarella cheese.
9. Bake at 180° for 25 minutes.
