Cauliflower with herb pesto: a tasty and healthy dish!

INGREDIENTS
1 cauliflower
40ml (3 tbsp) of extra virgin olive oil
1/4 tsp of paprika
1/4 tsp of turmeric
1/4 tsp of garlic powder
1/2 tsp of salt
Pepper
For the pesto:
60g of walnuts
Chives
Parsley
Rocket
3 tbsp of nutritional yeast
1/2 lemon (juice)
Olive oil
Salt
Pepper
Pumpkin seeds
METHOD
1. Clean the cauliflower and transfer it to the pot with salted water. Boil for 10 minutes and remove from the heat.
2. In a small bowl add the extra virgin olive oil, paprika, turmeric, garlic powder, salt, and pepper and mix together.
3. Transfer the cauliflower to the casserole and brush it with the prepared mixture to cover all sides. Transfer to the oven and bake at 180°C/360°F for 15 minutes.
4. In a food processor prepare the pesto by mixing the walnuts, chives, parsley, nutritional yeast, lemon (juice), olive oil, salt, and pepper.
5. Transfer the cauliflower to the serving plate and add a few spoons of prepared pesto on top. Decorate with pumpkin seeds and serve.
