Cauliflower omelette: a delicious dish to make in minutes!

INGREDIENTS
1 medium head (around 400g) cauliflower;
2-4 bay leaves;
6 large eggs;
150 g (¾ cup) parmesan cheese;
Salt and pepper.

METHOD
  1. Cut cauliflower into florets.
  2. Boil cauliflower in salted water, adding some bay leaves into the water, for around 10 minutes.
  3. Drain cauliflower florets and remove bay leaves. Let the cauliflower cool down.
  4. Whisk eggs with parmesan cheese, and season with salt and pepper.
  5. Pour the egg mixture on top of the cauliflower and mix together.
  6. Pour cauliflower omelet into a pan placed over medium-low heat. Cover the pan with a lid and cook for 5-6 minutes, then carefully flip it using a plate.
  7. Cook for 5-6 minutes more and serve.
