Chicken-Fried Cauliflower

INGREDIENTS
1 small cauliflower
Salt and freshly ground black pepper to taste
3 cups flour
2 tbsp ground white pepper
4 tsp baking powder
1 1/4 cup milk
2 eggs
Vegetable oil, for frying
METHOD
Preheat the oven to 250 degrees.
Cut the cauliflower into 1-inch-thick slices. Sprinkle each with salt and pepper and set aside.
Whisk together the flour, white pepper, baking powder and 2 teaspoons salt in a shallow bowl. Pour in 3 tablespoons of the milk and use your fingers to work it in.
In another bowl whisk together the eggs and the remaining milk.
Dredge each cauliflower in the flour mixture, dip in the egg mixture, and then return to the flour mixture, pressing firmly to coat.
Heat about 1-inch of oil in a cast-iron skillet and fry the cauliflower until golden brown.
Season fried cauliflower steaks with salt and serve hot with sauce by your choice.
