Cauliflower, cheese and garlic flat bread

INGREDIENTS

300g cauliflower florets
2 eggs
125g mozzarella, grated
3 garlic cloves, crushed
1 1/2 tablespoons finely chopped flat-leaf parsley

Preparation:

Preheat oven to 400°F/200°C. Blend the cauliflower in batches into rice size pieces.
Place in microwave safe bowl. Microwave for 8 minutes. Cool slightly.
Combine mozzarella, eggs, garlic, parsley and culiflower.
Lay baking tray with baking paper. Spoon onto tray and shape into a 20 cm * 30 cm
rectangle using spatula to line edges. Bake for 25-30 minutes or until golden.
Transfer to a board. Cut into half lenghtways and each half into 4 triangles.
Serve warm. Enjoy!
