Chicken Parmesan Stuffed Garlic Bread

Ingredients1 chicken breast, boneless and skinless
1 cup flour
2 eggs, beaten
2 cups breadcrumbs
1 cup vegetable oil, for frying
1 big baguette
10-12 mozzarella slices
Marinara sauce for serving
Garlic butter:
⅓ cup melted butter
3 cloves garlic, minced
1 tbsp parsley, chopped
1 tbsp Parmesan, grated
METHOD
1. Slice the chicken breast into 1-centimeter-thick strips.
2. Dip the chicken strips in flour, eggs, and bread crumbs.
3. Heat the oil in a pan over medium heat and fry the chicken.
4. Slice the baguette into thirds or fourths (each baguette piece should be roughly the same length of fried chicken strips) and empty the insides with a knife and hands.
5. Lay two slices of mozzarella on top of each other with a 1-inch overlap. Place a chicken strip on the overlapping region, then fold the mozzarella tightly around the chicken.
6. Put the rolled chicken strips into a baguette.
7. Slice the stuffed baguette pieces into 1-inch slices, then place them side-by-side on a baking sheet lined with a foil.
8. In a small bowl, mix together ingredients for garlic butter and brush the garlic butter over the baguette slices.
9. Wrap the foil over the baguette and bake for 20-25 minutes.
10. Serve with marinara sauce!
