Soft caramel truffles: the recipe for an irresistible treat

Ingredients:
- For the caramel:
150 g of sugar
70 g of cold butter
110 of whipping cream
1 tsp of instant coffee
1 pinch of salt
- For the batter:
4 eggs
1 pinch of salt
130 g of sugar
90 g of flour
30 g of cocoa powder
1 tsp of baking powder
- For the filling:
300 g of cream cheese (or mascarpone cheese)
1 tsp of vanilla sugar or vanilla extract
30 g of powdered sugar
200 ml of whipping cream
Directions:
1. Melt sugar in a pan at medium heat.
2. Add cold butter in pieces and whipping cream.
3. Lastly stir in coffee and salt.
4. Sift the mixture and let cool.
5. Whisk the eggs with sugar and salt. Then add salt.
6. Aside, mix and sift flour, cocoa powder and baking powder.
7. Then stir in dry ingredients into the batter gently mixing.
8. Pour the batter into a rectangular tray coated with baking paper.
9. Bake in a pre-heated oven at 170° for about 15 minutes.
10. Let cool, then make some disks out of the cake.
11. Now make the filling: mix cheese, vanilla sugar, powdered sugar and whipping cream.
12. Assemble the truffles filling them with cheese cream and caramel.
13. Cover with some crumbled cake scraps.
