Stuffed eggplant rolls: the savory dish to try

Ingredients:
2 eggplants
Olive oil
Salt and pepper
Sweet paprika
350 g of minced meat
Half an onion
2 eggs
Fresh parsley
5 g of coriander
5 g of ginger
50 g of breadcrumbs
1 garlic clove
200 g of tomato sauce
150 ml of water
80 g of mozzarella cheese
30 g of grated cheese
Directions:
1. For starters slice eggplants and place them in a tray covered in baking paper.
2. Mix oil, salt, pepper and paprika. Then use this mixture to brush eggplants on both sides.
3. Bake at 180° for about 20 minutes.
4. Meanwhile make the stuffing mixing meat, onion, eggs, breadcrumbs, parsley, salt, pepper and spices.
5. Knead and shape some little meatballs.
6. Fry in hot seeds oil.
7. Stuff eggplants with the meat stuffing.
8. In a large pan pour oil and stir fry chopped onion and garlic.
9. Then mix with tomato sauce, salt, pepper and water.
10. Let boil for 10 minutes, then add parsley.
11. Now add eggplant rolls.
12. Cover with more tomato sauce and cheese.
13. Finish cooking at low heat for 10 minutes.
