Zucchini rolls: a quick, simple and savory dish

Ingredients:
2 zucchini
Salt
2 potatoes
1 onion
Olive oil
1 bell pepper
125 g of mozzarella cheese
3 eggs
4 tbsp of flour
Vegetable oil
Directions:
1. Slice the zucchini and season them with salt. Let them rest for 20 minutes.
2. Dice potatoes and boil them in salted water.
3. In a pan stir fry the onion, then add bell pepper.
4. Mash the potatoes and add mozzarella cheese, onion and bell pepper.
5. Whisk eggs and dip zucchini in it, then coat them with flour.
6. Fry the zucchini, stuff them and roll.
