"Quick" bread: the recipe to make it soft and fragrant at home

Ingredients:
500 g of bread flour
400 g of water
8 g of fresh brewer's yeast
10 g of salt
Directions:
1. For starters dissolve yeast in water.
2. Then in a large bowl mix flour and the water and yeast mixture a little bit at a time.
3. Lastly add salt.
4. Blend well for 1 minute.
5. Cover the dough and let rise for an hour.
6. Fold the dough into the bowl with wet hands.
7. Then cover again and let rise for another hour.
8. Repeat the folding process onto a floured work surface and let rest, covered, for another 30 minutes.
9. Shape the bread loaf and cut it on surface.
10. Bake in a convection oven at 250° for 20 minutes, after that cover the loaf with some aluminum foil and finish baking at 200° for another 30 minutes.
