Strawberry cream cake: the recipe for an easy and delicious recipe

Ingredients:
- For the batter:
4 eggs
1 pinch of salt
120 g of sugar
20 g of vegetable oil
150 g of flour
10 g of cornstarch
10 g of baking powder
- For the strawberry cream:
200 g of strawberries
15 g of lemon juice
180 g of sugar
10 g of gelatin powder
60 g of water
400 g of cream
180 g of natural yogurt (or sour cream)
- For the syrup:
100 ml of milk (or cream)
1 tsp of powdered sugar
- For coating:
300 g of mascarpone cheese (or cream cheese)
60 g og powdered sugar
150 g of cream
Directions:
1. In a bowl whisk eggs, sugar and salt until you get a white and fluffy batter. Then add oil.
2. Aside mix flour, cornstarch and baking powder. Sift them and stir them into the batter.
3. Pour in a round cake mold and bake in a pre-heated oven at 170° for 40 minutes.
4. Cut the cake into two equal layers.
5. Mix strawberries, lemon juice and sugar in a saucepan. Cook for 2-3 minutes.
6. Hydrate gelatin by mixing it with water and let rest for 7-10 minutes.
7. Now blend strawberries and mix them with hydrated gelatin.
8. Add whipped cream and yogurt.
9. Wet the cake with a mixture made of milk (or cream) and powdered sugar.
10. Assemble the dessert alternating cake layers and strawberry cream layers.
11. Let it harden in the fridge for 4 hours.
12. Mix mascarpone cheese, powdered sugar and cream. Use this cream to coat the entire cake.
13. Decorate the cake with some cream peaks and fresh strawberries.
