Baked stuffed eggplants: the easy recipe for a savory meal

Ingredients:
2 eggplants (about 600g)
Oil, salt and pepper
Water
Sweet paprika
Garlic powder
5-6 sun dried tomatoes
200 g of mozzarella cheese
100 g of tomato sauce
Fresh basil leaves
Directions:
1. Cut the eggplants in slices (about 1 cm thick).
2. Soak them in water and salt, cover and let rest for 15 minutes.
3. Make the seasoning mixing oil, paprika, salt, pepper and garlic powder.
4. After drying them, place the eggplants in a tray and brush both sides with the seasoning.
5. Bake at 180° for 20 minutes.
6. Season tomato sauce with oil, salt and pepper then spread it on top of the eggplants' slices.
7. Also add diced sun dried tomatoes, mozzarella cheese and basil leaves.
8. Repeat for more layers, then finish with grated cheese and some olive oil.
9. Bake again at 180° for another 15 minutes.
