Strawberry cheesecake: the delicious recipe to try

Ingredients:
- For the base:
250 g of dry biscuits
100 g of butter
- For the cream:
500 g of mascarpone cheese
320 g of cream cheese
200 ml of fresh whipping cream
80 g of powdered sugar
1 tsp of vanilla extract
- For the topping:
550 g of strawberries
Half a glass of water
2 tbsp of sugar
Directions:
1. For starters make the base by blending the biscuits.
2. Mix them with melted butter.
3. Coat a cake mold (26 cm diameter) in baking paper then spread the biscuits on the bottom.
4. Flatten using a spoon, then let cool in the freezer.
5. Aside, mix cream cheese, mascarpone cheese, sugar and vanilla.
6. Lastly add whipping cream too and mix using electrical whisk for 3 to 4 minutes.
7. Pour the cream on top of the biscuits base and level using a spatula.
8. Let cool in the fridge for 1 hour.
9. Meanwhile, cut the strawberries in pieces and mix them in a saucepan with water and sugar.
10. Cook on the stove at low heat for 30 minutes.
11. After it's completely cold, use a hand mixer to blend the strawberries.
12. Pour the mixture on top of the cake and let cool again in the fridge for at least 8 hours.
13. Decorate with strawberries and mint leaves.
