Coconut sponge cake: the recipe for an easy and delicious dessert

Ingredients:
- For the batter:
2 eggs
160 g of sugar
130 g of greek yogurt (or sour cream)
180 g of coconut milk (or cow milk)
1 tsp of vanilla extract
115 g of flour
5 g of baking powder
120 g of grated coconut
50 g of sunflower seeds oil
- For the syrup:
120 g of coconut milk (or cow milk)
30 g of sugar
1 tsp of vanilla extract
- For the icing:
100 g of dark chocolate
2 tbsp of sunflower seeds oil
Directions:
1. Whisk eggs and sugar for 5 minutes until you get a fluffy and light batter.
2. Stir in yogurt (or sour cream), vanilla extract milk (coconut or cow).
3. Aside, mix flour, corn starch and baking powder. Now stir into the batter in two or three times. Lastly, add grated coconut and oil.
4. Pour the batter into a cake mold (16 cm diameter) and bake in a pre-heated oven at 170 degrees for 45-55 minutes.
5. Now make the syrup by heating some milk and mixing it with sugar and vanilla extract.
6. Use the syrup to wet the cake and make some holes in it using a fork.
7. Lastly, make the icing mixing chocolate and oil and melting the mixture until it's smooth and shiny.
8. Pour the icing on the cake to completely coat it and decorate with coconut flakes.
