Hasselback potato with veggies: the tasty and beautiful meal

Ingredients:
3 potatoes
1 eggplant
1 tomato
3 small zucchini
3 garlic cloves
Olive oil
Basil leaves
Thyme leaves
Salt and black pepper
Directions:
1. Wash and cut eggplant, zucchini and tomato.
2. Cut the potatoes ad the video shows and fill them with veggies (alternate to make the hasselback effect).
2. In a little bowl mix oil, chopped garlic, salt and pepper.
3. Season the potatoes, add thyme, basil and wrap them in the parchment paper.
4. Bake at 200° for about 1 hour.
5. Serve the potatoes with meat, fish or everything you prefer.
