Pizza Hasselback Potatoes

Ingredients:
6 potatoes;
2 tbsp olive oil;
salt and pepper;
50 slices salami;
1 cup tomato sauce;
1 ½ cup mozzarella cheese;
fresh basil for serving.

Instructions
Place clean potato between two wooden tablespoons. Using sharp knife, make cuts in potato about 2/3 way deep (tablespoons will help you not to cut it through).
Rub potatoes with olive oil, generous amount of salt and pepper. Bake for 1 hour at 180C/350F.
Fill slits with sliced salami, top with tomato sauce and mozzarella. Bake at the same temperature for 10 minutes more. Serve with chopped fresh basil.
