Eggplant cannoli: is sure to become a family favourite.

Easy, quick and delicious, they will be a hit!

INGREDIENTS

1 eggplant, sliced

90g baked ham

90g cheese, sliced

2 eggs

150 g (1 cup) breadcrumbs

olive oil to taste

salt to taste

METHOD

Slice the eggplant into 0,5 cm rounds.
Heat a grill pan or an electric grill to medium-hot and cook eggplant slices for 3-5 minutes per side. Season with salt and some olive oil.
In a bowl beat 2 eggs.
Dip each eggplant round in eggs, then coat in breadcrumbs.
Stuff each slice with cheese and a piece of cooked ham.
Secure with a toothpick and place on the baking tray lined with baking paper.
Drizzle with some olive oil and bake at 200°C/400°F in the preheated convection oven for 5-7 minutes or until cheese melts.
Serve and enjoy!
