Clementine brioche: a fluffy dessert to try!

INGREDIENTS
2 eggs
550g (4 cups) flour
400 g orange or clementine
10g fresh yeast or 7 g dry yeast
60g (1/3 cup) sugar
1 tbsp of butter
100g hazelnut cream
1 tsp salt
1 egg yolk
2 tbsp honey
4 tbsp pistachios grain
1 egg yolk
2 tbsp honey
4 tbsp pistachios grain
METHOD
- In a bowl mix clementines with eggs, sugar and yeast. Transfer it to the blender and mix on high.
- Strain the mixture through a sieve, add in the flour, butter and salt. Let the dough rest for about 2 hours.
- Divide it into the 6 portions and transfer to a baking pan, let it rise and grease it with egg yolk.
- Add in hazelnut cream with a confectionery bag.
- Bake at 180’C ( 356’F ) for 40 minutes.
- Grease with honey and sprinkle with pistachios grain.
