Homemade croissant with custard: the recipe for a sweet and delicious breakfast

Ingredients:
85 ml of water
85 ml of milk
25 g of brewer's yeast
50 g of granulated sugar
250 g of pastry flour
250 g of all purpose flour
100 g of eggs
8 g of salt
250+30 g of butter
Directions:
1. In a bowl mix water and milk, then melt yeast in this mix.
2. Add sugar and mix well to blend.
3. Sift and add in flours.
4. Aside, whisk eggs and salt, then add to the dough.
5. After mixing with a spatula, start kneading.
6. When the dough is smooth enough, melt and add butter too.
7. Knead for 10 minutes.
8. Cover the dough with some plastic wrap and let it rise for 40 minutes.
9. Cut a butter block in thin slices, place them in baking paper and use the rollin pin to flatten.
10. Let it harden the butter square in the fridge.
11. Meanwhile, spread the croissant dough to make a rectangle.
12. Place the butter in the middle and cover with the dough, then spread with the rolling pin. Fold for 2 times more.
13. Place in the fridge for 30 minutes.
14. Spread the dough again a make some triangles out of it, then roll them (from the bottom up) to get the typical croissant shape.
15. Let rise them at 30 degrees for 90 minutes.
16. Brush their surface with a mix of egg yolk and milk.
17. Bake in a ventilated oven at 180 degrees for 20 minutes.
18. Fill the croissants as you like.
