Saint Honoré cake: the recipe for a delicious dessert to absolutely try

Ingredients:

- For the sponge cake:

4 eggs (280 g)

160 g of granulated sugar

160 g of flour

1/2 vanilla bean

1 lemon zest

- For the custard:

3 yolks (60 g)

60 g of granulated sugar

20 g of corn starch

1/2 vanilla bean

300 ml of fresh milk

- For the syrup:

100 ml of water

50 g of granulated sugar

200 ml of Maraschino liquor

- For decoration:

500 ml of whipping cream

30 g of powdered sugar

2 tbsp of unsweetened cocoa powder

Cream puffs dipped in caramel

Directions:

1. Start by whipping the egg yolks.

2. Gradually mix in the granulated sugar.

3. Add the egg yolks one at the time.

4. Mix in the vanilla and lemon zest too.

5. Finally add sifted flour.

6. Cover a cake pan (22 cm diameter) in baking paper and pour in the batter.

7. Bake in a static pre-heated oven at 200 degrees for 10 minutes, then continue cooking at 175 degrees for 15 to 20 minutes.

8. Now make the custard by mixing egg yolks and sugar. The pour in cornstarch and vanilla.

9. Boil the milk, then add the egg yolks mix and turn the stove. Mix until it thickens.

10. Refine the cake's outer edge with a knife, then divide it into 2 disks.

11. Now make the syrup by simply boiling water and sugar, then adding the liquor. Let cool a bit.

12. Assemble the dessert now alternating syrup wet cake layers and custard cream.

13. Whip the cream with some powdered sugar and use it to cover the cake.

14. Decorate the edges with crumbled sponge cake cuttings.

15. Sift and add cocoa powder to the cream and use this to decorate the cake's surface.

16. Lastly place some cream puffs dipped in caramel for decoration.
