Vanilla sponge cake: the delicious dessert perfect for holiday season

Ingredients:
- For the cake:
37 g of milk
2 g of instant coffee
Red food coloring
30 g of seed oil
Vanilla extract
3 eggs
80 g of sugar
60 g of flour
8 g of cocoa powder
- For the cream:
400 g of mascarpone cheese
180 g of whipping cream
110 g of powdered sugar
Vanilla extract
- For the syrup:
Cold coffee
Directions:
1. Mix instant coffee and warm milk.
2. In a bowl mix flour and cocoa powder.
3. Separare yolks from whites.
4. Blend together the coffee and milk mix, yolks, oil, vanilla extract and food coloring. Mix well using a whisk.
5. Sift the powder and add them to the previous mix.
6. Whip the whites with some sugar, then pour them into the batter.
7. Pour the batter in a cake pan (16 cm diameter) with some baking paper on the bottom.
8. Bake in a pre-heated oven at 150 degrees for 55 minutes.
9. While the cake cools down, make the cream mixing mascarpone cheese, powdered sugar and vanilla.
10. When all the ingredients are well blended add in whipping cream too and mix using electric whisks.
11. Let the cream rest into the fridge.
12. Divide the cake into three equal parts and cut off the most superficial layer.
13. Assemble the dessert alternating layers of cake wet with cold coffee and cream peaks (use a piping bag).
