Creme brulée doughnuts: this version is irresistible!

Here's how to put a twist on a French classic, by turning a Crème Brulee into a decadent pastry treat!

INGREDIENTS
For the donuts:
• 215ml / 7.6oz milk
• 10g yeast
• 520g / 3.5 cups flour
• 40g / 0.25 cup sugar
•2 eggs
• 50g / 0.3 cup butter
• vanilla
• salt
 
Pastry Cream:
• 500ml / 17.6oz of milk
• 2 tbsp butter
• 4 egg yolks
• 2 tbsp cornstarch
• 90g / 0.6 cups sugar
• 1 tsp vanilla sugar
• ginger
 
METHOD
  1. Mix all the ingredients for the donuts and knead the dough. Let rise for 2 hours.
  2. Grind ginger in a blender and put in a teabag.
  3. Bring milk with ginger in a teabag to a boil. Mix egg yolks with cornstarch, vanilla sugar. Combine with milk and brew a cream.
  4. Roll out the dough 1.5 cm thick and cut out the donuts. Deep-fry. Fill each donut with cream. Boil caramel and dip each donut into it.
