Sweetened orange fritters: how to make perfect puffy and irresistible versions!

INGREDIENTS
For the swivels recipe:
320g (2 3/4 cups) of Flour
30g (1/4 cup) of Sugar
10g (3/4 tbsp) of Vanilla sugar
7g of Dry yeast
110ml (1/2 cup) of Milk
1 Egg
40g (1/4 cup) of Butter
a pinch of Salt
130g (3/4 cup) of Sugar
Orange (zest)
Lemon (zest)
Oil for frying
For triangles recipe:
Orange (zest)
1 Orange (juice)
30g (1/4 cup) of Sugar
10g (3/4 tbsp) of Vanilla sugar
60ml (1/4 cup) of Milk
260g (2 1/4 cups) of Flour
8g (3/4 tbsp) of Baking powder
Oil for frying
Sugar for coating
METHOD
For the swivels recipe:
1. In a bowl add the flour, sugar, vanilla sugar, dry yeast, milk, egg, butter, and salt and mix. When dough starts to form knead it with hands to obtain compact dough. Cover with cling film and let it rise for 2 hours, or until is double in volume.
2. In a small bowl add the sugar, orange (zest), and lemon (zest) and mix to combine.
3. After time has elapsed transfer the dough to the working surface and roll it out. Spread the sugar and zest mixture on top and roll up. Cut on slices.
4. Pass them to the pan with hot oil and fry until they are golden brown on both sides.
5. Serve them on a serving plate all together.
For triangles recipe:
1. In a bowl grate the orange and add the sugar, vanilla sugar, milk, flour, baking powder, and mix. When dough starts to form knead it with hands to obtain compact dough.
2. Roll out the dough and cut the dough into triangle shapes with the dough cutter.
3. Transfer them to the pan with hot oil and fry on both sides until they are golden brown.
4. Coat them with sugar and serve them all together on a serving dish.
