Potate and rosemary focaccia: a quick meal full of flavor

Ingredients:
400 gr of potatoes
250 gr of rice flour
150 g of water
40 gr of corn starch
7 g of salt
30 gr of olive oil
5 gr of fresh yeast
olive oil
coarse salt
fresh or dried rosemary
Directions:
Boil the potatoes and mash them, then let them cool.
Dissolve the yeast in the oil and water, set aside. Mix the potatoes with flour and cornstarch. Add the mixture with the oil and mix adding the salt too. Let the dough rest for 2 hours.
Then spread the dough in a pan and season with oil, salt and rosemary. Bake at 400°F (200°) for 40 minutes.
