Fluffy bread: all the simple steps to make it at home

Ingredients:
150 gr sourdough
1 teaspoon sugar
220 ml warm milk
270 ml warm water
750 gr type 1 flour
1 teaspoon and a half of salt
Preparation:
You can use both the bread maker and a common planetary mixer (or do it by hand).
Mix yeast, sugar, milk and water. Then add all the flour and salt.
Put the dough in a greased container and leave it in the fridge for 12 hours.
Then make some folds and let it rest for 30 minutes, carry out this step 4 times.
Arrived at the fourth time then let rise 3-4 hours.
Then put the dough in a pan with a floured cloth. Leave it for 3-4 hours and then turn on the oven at maximum temperature and with a pan with water. Cut the dough into the center and bake for 10 minutes. Then lower the temperature to 356°F (180°) for 40 minutes.
