Potato bread: how to prepare this amazing recipe

Ingredients:
2 potatoes
250 ml warm water (the one where you are going to boil the potatoes)
2 spoons of sugar
7 gr dry yeast
2 tbsp oil
500 gr flour
2 teaspoons salt
Preparation:
Boil the potatoes and then mash them, set aside.
Mix sugar and yeast in the cooking water of the potatoes and let stand for 15 minutes.
Then mix the mixture with the potatoes and add flour, oil and salt.
Let the dough rest overnight.
Then add some onion but this step is optional.
Form two loaves and let them rest for another hour.
Make the cuts on the surface and bake at 220 ° for 15 minutes and at 200 ° for 40 minutes.
