Potato fritters: how to prepare them in just a few steps!

Crispy outside and so cheesy inside, this recipe is a must-try! 
 
INGREDIENTS
1kg (2 pounds) boiled potatoes;
2 egg yolks;
½ tsp nutmeg;
Salt and pepper to taste;
100g (1 cup) grated parmesan;
3 tbsp chopped parsley;
2 eggs;
Breadcrumbs to coat;
1 block of mozzarella cheese.
METHOD
  1. Peel and mash cooked potatoes.
  2. Combine potato mash with salt, pepper, nutmeg, egg yolks, and parmesan.
  3. Cut cheese into rectangles.
  4. Take a couple of spoonfuls of potato mash and form a pattie, wrap it around cheese, making sure it's completely covered.
  5. Whisk 2 eggs and cover each potato fritter with egg and breadcrumbs.
  6. Fry for 6-7 minutes or until evenly golden.
