Vegan Eggplant Parmesan: Try The Alternative Version That Will Amaze You

Ingredients:
4 medium eggplants
3kg plum tomatoes
250g rice mozzarella
1 carrot
Fresh basil
1 clove garlic
50ml water
 
Directions:
Cook the tomatoes with water and carrot for 10 minutes.
Cut and grill the eggplants. Blend the tomatoes with basil, salt, a little oil and garlic. At this point you can compose your eggplant parmesan alternating with the diced mozzarella. Bake at 180°C (360°F) for 30 minutes.
