Cut the dough and stuff it: an excellent, tasty recipe

Ingredients (for 12 mini croissants):250 g flour 00
120 ml water
Brewer's yeast (7gr)
20g sugar
1 tsp salt
2 tbsp butter (room temperature)
1 egg yolk
Stuff with mozzarella or fior di latte (300gr)
Directions:
In a bowl, mix the yeast with a tablespoon of sugar and warm water. Then pour it into a bowl with the flour, the remaining sugar and the butter. Add the salt and knead the dough until a smooth and homogeneous mixture is obtained. Then cover the dough with a damp cloth and let it rise for 2/3 hours. Then form balls, roll them out and cut them into strips on one side. Stuff and close the mini croissants. Brush the egg yolk and bake at 200°C for 20 minutes.
