Chicken roll-ups with eggplant and smoked cheese: a delicious recipe for a quick dish

Ingredients:
eggplants
chicken breast
smoked cheese
bacon

Directions:
Place the slices of chicken breast on a cutting board, and put an eggplant on each of them. Add a piece of scamorza cheese to the center, then roll up the slices to create a roll and cover with the bacon. Fix them with a toothpick. Grab a pan and heat a little oil. Insert the roll-ups and brown them on all sides. Continue cooking for about 10-12 minutes, depending on the thickness of the meat, turning the rolls over, then serve.
