INGREDIENTS
For dough:
200ml (3/4 cup) of milk (lukewarm)
25g (2 tbsp) of sugar
7g of dry yeast
45g (1/3 cup) of flour
70g (1/2 cup) of sugar
1 egg
1 egg white
440g (3 3/4 cups) of flour
Salt
60g of butter
Vegetable oil
For the filling:
520g of apples
60g of butter
30g (1/4 cup) of sugar
5g (3/4 tbsp) of cornstarch
Egg yolk for brushing
METHOD
1. In a bowl add the milk (lukewarm), sugar, yeast, and flour and mix. Let it rest for 15 min to activate the yeast.
2. Add the egg, egg white, flour, salt, and butter and mix with a spatula. When the dough starts to form knead it with hands to obtain smooth dough. Add the vegetable oil at the end and knead it for a few minutes. Cover with cling film and let it rise for 1 hour.
3. Peel and cut the apples into small pieces and set them aside.
4. In a pan add the butter and sugar and mix. Add the apple pieces, cinnamon, and cornstarch, and cook until the apples are soft. Remove from the heat.
5. After time has elapsed punch out the gass from the dough and knead it for a few more minutes. Cover with cling film and let it rise for 30 more minutes.
6. After 30 minutes transfer the dough to the working surface and split it into 8 equal pieces. Form the balls and transfer them to the plate. Let them rest for 10 minutes.
7. After 10 minutes roll out each ball into a rectangle shape and add a few teaspoons of the prepared filling inside. Cut the edges and close them on all sides. Connect the edges to obtain the braid shape.
8. Transfer them to the baking tray covered with parchment paper and cover with cloth. Let them rise for 20 more minutes.
9. Brush them with egg yolk and transfer them to the oven. Bake at 180°C/360°F for 25 minutes.
10. Serve them all together on a serving dish and enjoy.
