The sweet apple omelette is a typical traditional Austrian and South Tyrolean recipe. Also known as Apfelschmarren, it is a sort of omelette with apples rich in sugar and cooked directly in a pan. It is generally served for breakfast, because it is full of nutrients and fills you with energy, but it is also ideal for a snack or to be served at a buffet for children's parties.

The apple omelette can be prepared in no time, you'll need just a few simple ingredients: milk, eggs, flour, a pinch of salt and apples cut into slices. How to prepare the sweet apple omelette

In a bowl, mix the flour with the milk, the cream and the egg yolks. Stir until you obtain a homogeneous mixture.

In a separate bowl, beat the egg whites until they turn stiff using an electric whisk, adding the sugar little by little. Once stiff, mix the egg whites with the rest of the mixture, mixing gently with a spatula from top to bottom.

Wash the apples and cut them into thin slices: the slices should all be similar in thickness.

Heat a non-stick pan greased with olive oil and, once the pan is hot, pour the mixture in and then add the apple slices evenly.

Let the mixture cook for a few minutes, then turn the omelette, helping yourself with a plate.

Once the omelette is ready, use a fork to crumble the omelette into smaller pieces, sprinkle them with icing sugar and let sauté for a couple of minutes, adding a knob of butter to help the icing sugar caramelize lightly. Then, serve the sweet omelettes on a plate spraying them with more icing sugar.

How to preserve the sweet apple omelette

The sweet apple omelette should be eaten while freshly made and still hot. If you want, however, you can preserve it up to the next day: seal it inside of an airtight container and heat it slightly before eating it, either in a pan or inside the oven.
