You've never made such soft brioches! It's not difficult at all if you follow this recipe!

INGREDIENTS
490g (3 4/5 cups) of all-purpose flour
120g (1/2 cup) of sugar
7g of dry yeast
1 lemon zest
1 vanilla pod
180ml (3/5 cup) of water
7 egg yolks
1/3 tsp of salt
100g of soft butter
Egg wash
METHOD
1. Remove the vanilla bean and set it aside.
2. Grate the lemon zest and set that aside as well.
3. In a bowl, pour the water and dissolve the yeast.
4. Add the egg yolks and vanilla. Beat well.
5. Add the sifted flour and salt, then start to knead by hand.
6. Once you have created a dough ball, add the soft butter and continue to knead until it is well incorporated.
7. Transfer the dough ball onto a work surface and fold it several times over itself.
8. Now it's time for the dough to rise, let it rest in a bowl covered with a cloth for at least 2 hours or until it doubles in size.
9. Divide it in half, one part will be used to create the braids.
10. Divide the dough again into fairly thick strands. For each of these, make 3 cuts and start to braid. See? You should get a braid like this.
11. For the other half of the dough, cut strands and simply form balls.
12. Place all your brioches on a baking tray and let them rise for another 30 minutes, covering them.
13. Brush with egg and sprinkle with sugar, then bake in the oven at 180°C (356°F) for 20 minutes.
