Ensaymada: the Filipino sweet buns you have to try!

Fluffy and just irresistible!
INGREDIENTS

150 ml milk + more for topping
65g (1/3 cup) sugar (or to taste) + more for topping
2 tbsp olive oil
375g (3 cups) flour
7 g dry or instant yeast
2 eggs
30g butter + more for topping
1/2 tsp sea salt
METHOD
- In a small pot or saucepan heat milk over low heat. Add sugar, butter and olive oil, and whisk until smooth and homogeneous. Turn the heat off.
- Whisk in eggs until fully incorporated and set aside.
- In a mixing bowl combine flour, sea salt and dry yeast. Add prepared warm milk mixture to a bowl and stir slightly with a spatula. Then use a hand mixer with dough hooks to make the dough.
- Cover the bowl with a kitchen cloth, and allow the dough to rise for 2 hours and in a warm place.
- When the time is up, make a ball from the dough and cut it into 8 parts and roll each piece into a rope.
- Make a spiral shape from each dough rope and arrange them on a baking tray lined with parchment paper or a baking mat. Cover again with a cloth and let sit at least for 30 minutes to rise.
- Meanwhile preheat your oven to 160C/320F. Brush ensaymadas with milk and bake for 20 minutes.
- When ready, brush the top of each ensaymada with softened butter and cover it with sugar. Enjoy!
