Ensaymada: the Filipino sweet buns you have to try!

Fluffy and just irresistible!

INGREDIENTS
150 ml milk + more for topping
65g (1/3 cup) sugar (or to taste) + more for topping
2 tbsp olive oil
375g (3 cups) flour
7 g dry or instant yeast
2 eggs
30g butter + more for topping
1/2 tsp sea salt

METHOD
  1.  In a small pot or saucepan heat milk over low heat. Add sugar, butter and olive oil, and whisk until smooth and homogeneous. Turn the heat off.
  2.  Whisk in eggs until fully incorporated and set aside.
  3.  In a mixing bowl combine flour, sea salt and dry yeast. Add prepared warm milk mixture to a bowl and stir slightly with a spatula. Then use a hand mixer with dough hooks to make the dough.
  4.  Cover the bowl with a kitchen cloth, and allow the dough to rise for 2 hours and in a warm place.
  5.  When the time is up, make a ball from the dough and cut it into 8 parts and roll each piece into a rope.
  6.  Make a spiral shape from each dough rope and arrange them on a baking tray lined with parchment paper or a baking mat. Cover again with a cloth and let sit at least for 30 minutes to rise.
  7.  Meanwhile preheat your oven to 160C/320F. Brush ensaymadas with milk and bake for 20 minutes.
  8.  When ready, brush the top of each ensaymada with softened butter and cover it with sugar. Enjoy!
