Apple pudding cake: sweet and creamy, you will love it!

This is not the usual apple cake, the result is surprising!

INGREDIENTS

1 apple, cored and sliced;

2 eggs;

100g (½ cup) sugar;

100ml (⅓ cup) milk;

200g (1 ¼ cups) all-purpose flour;

16g baking powder.

For the pastry cream:

1 egg;

50g (¼ cup) sugar;

15g (2 tbsp) cornstarch;

250ml (1 cup) milk.

METHOD

Whisk ingredients for the pastry cream together.
Place the saucepan with pastry cream mixture over low heat. Whisk and cook for 10 minutes until bubbly. Cover tightly and leave to cool down completely.
Beat eggs with sugar until pale. Add baking powder and flour. Whisk until smooth then pour in some milk and whisk again.
Spread apple slices all over the bottom of a prepared baking pan. Pour the batter and spread it evenly with a spatula.
Pipe some pastry cream on top and bake at 180C/350F for 30 minutes.
