Apple pudding cake: sweet and creamy, you will love it!

This is not the usual apple cake, the result is surprising!
INGREDIENTS
INGREDIENTS
1 apple, cored and sliced;
2 eggs;
100g (½ cup) sugar;
100ml (⅓ cup) milk;
200g (1 ¼ cups) all-purpose flour;
16g baking powder.
For the pastry cream:
1 egg;
50g (¼ cup) sugar;
15g (2 tbsp) cornstarch;
250ml (1 cup) milk.
METHOD
- Whisk ingredients for the pastry cream together.
- Place the saucepan with pastry cream mixture over low heat. Whisk and cook for 10 minutes until bubbly. Cover tightly and leave to cool down completely.
- Beat eggs with sugar until pale. Add baking powder and flour. Whisk until smooth then pour in some milk and whisk again.
- Spread apple slices all over the bottom of a prepared baking pan. Pour the batter and spread it evenly with a spatula.
- Pipe some pastry cream on top and bake at 180C/350F for 30 minutes.
