Baked zucchini with stuffing: the light and easy recipe to try

Ingredients:
3 zucchini
Olive oil
Salt
1 onion
200 g of cherry tomatoes
Chili pepper
1 green bell pepper
100 g of canned corn
100 g of cheese
Directions:
1. Cut zucchini in half and carve them.
2. Place them in a tray and brush each one with some olive oil.
3. Bake in a pre-heated oven at 200° for 15 minutes.
4. Finely chop onion and fry it in a pan with olive oil and salt.
5. Add chili pepper, diced bell tomatoes, bell pepper, zucchini pulp from before and corn.
6. Cook everything with a lid on for 15 minutes.
7. Mix cooked vegetables with grated cheese.
8. Bake again at 200° for 15 minutes.
