Eggplant savory pie: the tasty recipe everyone will love

Ingredients:
1 eggpant
Salt and pepper
Dried oregano
Olive oil
2 large tomatoes
Shortcrust pastry
2 tsp of basil pesto
80 g of grated mozzarella cheese
1 burrata (optional)
Directions:
1. Cut the eggplant in thin slices, leaving the peel on.
2. Sprinkle with salt and let sit for 15 minutes.
3. Slice tomatoes too and season them with salt and pepper.
4. Dry eggplant slices and brush them with olive oil, then add pepper and oregano.
5. Place shortcrust pastry in a mold, spread pesto on the bottom and sprinkle with grated mozzarella cheese.
6. Arrange vegetables, alternating vegetables and tomatoes.
7. Close the edges of your savory pie.
8. Bake at 180° for 30-40 minutes.
9. If you prefer, serve with burrata on top.
