Homemade bagels: the recipe for a savory snack

Ingredients:
12 g of fresh brewer's yeast
300 g of lukewarm water
280 g of lukewarm milk
1 tsp of sugar (or honey)
1 kg of bread flour (or 500 g of cake flour + 500 g of Manitoba flour)
65 g of cold butter
25 g of salt
Directions:
1. Mix water, milk and crumbled yeast.
2. Add flour and knead.
3. Also add butter in pieces and lastly add salt.
4. Knead for 10 minutes, then place the dough in a bowl covered with plastic wrap. Let rise for 2 hours.
5. Divide the dough into equal pieces (about 70 g each) and shape them into some balls.
6. Cover and let rise again for 20 minutes.
7. Shape the bagels, cover and let rest for 20 minutes more.
8. Boil some water in a large pot, then add sugar. Dip the bagels in it and cook for 20/30 seconds each side.
9. Place them in a tray covered with baking paper and brush with whisked eggs and milk.
10. Decorate with seeds and chopped pistachios.
11. Bake at 200° for 20 minutes.
12. Fill as you like.
