Homemade bagels: moist, soft and easy to make!

This easy homemade bagel recipe proves that you can make deliciously chewy bagels in your own kitchen with only a few basic ingredients!

175 g (6 oz) warm water;
325 g (11.4 oz) flour;
1 tsp dry yeast;
12 g (0.4 oz) sugar;
1 tsp salt;
12 cups water;
2 tsp baking soda.

METHOD
- To make a starter combine 4 oz flour, warm water and yeast in a bowl. Set aside to activate in a warm place for 2-3 hours.
- Whisk leftover flour with salt and sugar. Pour the starter in and knead the dough for 12 minutes, until nice and smooth.
- Cover the dough with plastic and leave to rest in a cool place for 20 minutes.
- Cut the rested dough into 65 g (2.2 oz) pieces. Roll each piece into a ball and cover with plastic. Let rest for 20 minutes.
- Pinch a hole in the middle of each ball and carefully stretch it out to form a bagel. Cover and leave in a warm place for 20-40 minutes. To check if bagels have proven right just place one in a bowl of cold water: if it floats, then it is proven right.
- Cover the baking sheet with bagels with some plastic and leave them in a fridge overnight to develop flavor.
- Boil 12 cups of water, add baking soda in. Boil each bagel for 30 seconds on each side, then transfer onto a baking sheet and sprinkle everything bagel seasoning mix on top.
- Bake at 218C/425F for 14 minutes.
