Breaded eggplant rolls: the recipe for an original appetizer

Ingredients:
- For the eggplants:
1 large eggplant
30 g of olive oil
Salt and pepper
Paprika dolce
Garlic powder
Breadcrumbs
Dried oregano
- For the stuffing:
Lettuce
Red pesto
Mozzarella cheese
Cherry tomatoes
Cream cheese
Smoked salmon
Directions:
1. Slice the eggplant, then season with an oil and spices mix.
2. After that coat them with a mixture of breadcrumbs, salt, paprika and oregano.
3. Bake at 180° for 15-20 minutes.
4. Fill baked eggplant slices, then shape the rolls and use a toothpick to hold them still.
