Stuffed eggplants: the recipe for a tasty and savory dish

Ingredients:
3 medium eggplants (700 g)
Olive oil
Salt and pepper
1 onion
2 medium bell peppers
300 g of ground beef
Sweet paprika
Ginger
Cumin
Parsley
250 of tomato sauce
150 ml of water
1 mozzarella (120 g)
50 g of grated cheese
Directions:
1. Peel the eggplants, then season with salt and olive oil.
2. Bake them at 180° for 25-30 minutes.
3. Finely chop the onion and stir fry it in a pan with some olive oil.
4. Also add chopped bell peppers, salt, pepper, garlic and meat.
5. Season with paprika, ginger, cumin and coriander.
6. Cook for 6-7 minutes, then add chopped fresh parsley and tomato sauce.
7. Cover with water and cook everything for another 15 minutes.
8. Pour some tomato sauce and some water in a baking tray.
9. Place the eggplants you cooked before and cut them in the middle.
10. Fill with the meat and vegetable stuffing, then cover with mozzarella and grated cheese.
11. Bake again at 180° for about 30 minutes.
