Ingredients:

COCOA BISCUIT:

1 egg

30g sugar

15g hazelnut flour

24g "00" flour

7g cocoa powder

1g baking powder

24g milk

28g seed oil

WHITE CHOCOLATE MOUSSE:

200g milk

250g cream

20g sugar

170g white chocolate

6g gelatin in sheets

30g cold water

STRAWBERRY GELEE:

120g strawberries

30g sugar

30g water

1/2 lemon juice

3g gelatin

15g cold water

Directions:

1. Biscuit: mix the whole egg with sugar, flour, cocoa, yeast, milk and oil. Pour the mixture into the mold and bake at 170 degrees for 20 minutes.

2. Mousse: soak the gelatin. Separately, melt the white chocolate. Dissolve the gelatin in the hot milk and add to the melted chocolate, leave in the fridge. Whip the cream and refrigerate.

3. Cut the strawberries and better outline the cocoa biscuit.

4. Add the whipped cream to the white chocolate and assemble the first part of the cake. Leave in the freezer for 1 hour.

5. Gelee: soak the gelatin. Cook the strawberries with sugar, water and lemon juice. Blend everything by adding the gelatin. Put in the fridge to cool.

6. Cover the cake with the strawberry gelee and leave in the freezer for 3 hours.
