Coffee and mascarpone sponge cake: the creamy and delicious dessert

Ingredients:
100g cream
3.5g instant coffee
18g honey
130g white chocolate
25g butter
SPONGE CAKE:
50g seed oil
55g dark chocolate
35g milk
4.5g soluble coffee
15g cocoa powder
60g "00" flour
15g milk
4 eggs
65g sugar
MASCARPONE CREAM:
150g spreadable cheese
150g mascarpone
150ml cream
80g powdered sugar
COFFEE BATH:
40g milk
10g espresso coffee
5g sugar
Directions:
1. Coffee ganache: dissolve the coffee in the hot cream. In a bowl, add white chocolate, honey and cream with the coffee. Melt everything and then add the butter too, leave in the fridge for 12 hours.
2. Sponge cake: melt the dark chocolate with milk, oil and soluble coffee. Then add an egg, the powders and three other yolks. Beat the egg whites until stiff and add them to the mixture. Bake at 120 ° for an hour and at 150 for 10 minutes.
3. Mascarpone cream: mix the cheese with mascarpone, icing sugar and whipped cream.
4. Assemble the cake and serve.
